I love anything to do with food and this is a very interesting article about food. This article is about the Moto restaurant in Chicago and its innovative chef Homaro Cantu. This restaurant bends diners’ expectations of what is edible through the use of many tools including a Class 4 laser. At this restaurant meals are printed on edible paper, frozen instantly in liquid nitrogen, and baked in polymer ovens that fit in the palm of your hand. The article did not go into much detail about how the restaurant makes it foods because of confidentiality. The restaurant first attracted national attention by serving edible menus printed with a Canon inkjet. The restaurant’s plan is to bring its innovations to the masses and revolutionize the way the world eats. Homaro Cantu, a Cordon Bleu graduate, has filed 16 patents and is negotiating with big-brand stores to bring his multifunctional kitchen utensils to store shelves.

I think it would be fun to eat at this restaurant; at the very least, it would be an interesting experience. I also find it commendable that Homaro Cantu’s main goal with his innovations is conservation. He wants to invent things that will allow people to use world resources, such as food and paper, more efficiently. His goal is to “green” the restaurant industry. The article said he wants to print ads that you can eat which I think is a great idea. Many food ads look good enough to eat, so if you could really eat them that would be really neat.
